Like other previous scientific publications, Dr Vinson’s work attributes the slimming properties of green coffee to hepatic metabolism inhibition by the carbohydrates in chlorogenic acid, one of the phenolic compounds found in green coffee extract. Green coffee thus helps to reduce the number of kilocalories received by the body in the form of sugars. Chlorogenic acid also affects fat formation (lipogenesis) and helps to prevent its accumulation. The modulating effect of the gastric peptides (YY) that stimulate the appetite is also one of the properties that different studies attribute to the substance.

With regard to safety, none of the publications reports side effects secondary to prolonged consumption of this natural extract; indeed, they all highlight its excellent tolerability.

The high-temperature roasting process undergone by the coffee that we normally drink removes practically all the chlorogenic acid, which is why it does not have the same dietary value as green coffee.
